Orange Liqueur Soufflé 橙酒梳芙厘【食譜】


法國甜品 Soufflé 梳芙厘,當「她」蓬鬆地脹起來時,夾雜著橙酒香氣,優雅多姿的身段,你可以抗拒「她」嗎?

Serves (2)

Ingredients:

(Custard base) Part A
20g butter
160g cream
2 egg yolk
30g custard powder
2 Tbsp Cognac-based orange liqueursuggested - Grand Marnier Cordon Rougeor coffee liqueur
 
(Meringue) Part B
2 egg white
20g caster sugar
 
1.  Dissolves ingredients (Part A) using steam or a water bath over low heat and then leaving it in shallow pan to cool slowly, add orange liqueur
 


 
2.  Beat the  (Part B) egg white, slowly add caster sugar and mix well, grease 2 ramekins, dust with caster sugar, add 3 Tbsp of (Part A & B) and then cover with (Meringue) mixture
 



 
3.  Preheat oven to 200°C, bake for approximately 10-12 minutes in the middle shelf of the oven, until firm in the outside but wet inside.

吉士醬)

吉士粉

湯匙 橙味干邑(Grand Marnier Cordon Rouge)或 咖啡酒精
 
 (
酥皮)
2
蛋白

細白砂糖
 
1.  
低溫,將所有 (吉士醬) 材料完全溶解,吉士粉要逐少加入,待涼至室溫,添加橙味干邑
 
2.  
(酥皮) 蛋白打至幼滑,慢慢地添加細白砂糖,繼續打勻,在 2個(Ramekin)陶瓷小模子內塗抹黃油,拍少許細白砂糖,先放入 3湯匙(吉士醬和酥皮混合液),拌勻,再覆蓋上 (酥皮)
 
3.  
預熱烤箱至200°C 10-12分鐘,直到外表面膨脹起來,裡面仍然濕潤
