Homemade Hainanese Chicken Rice 自家製海南雞飯 【食譜】

Homemade Hainanese Chicken Rice 自家製海南雞飯
Recipe In both English and Chinese 
製作難度:
 
Ingredients:  (serves 8)
1 chicken 1.2 – 1.5kg
chicken stock (enough to cover the chicken)
2 Garlic
2 Ginger
2 Lemon grass
3 Pandan leaves
1 tsp Butter
1 tsp Salt
 
4 cups Sushi rice
 
Seasoning:
Shaoxing yellow wine
Sesame oil
Soy sauce
Salt
 
Garnish:
Cucumber sliced
Tomatoes sliced
Coriander leaves
 
Dip sauce:

Left: Dark soy sauce (1 tbsp premium dark shang loo tau soy sauce & 1 tbsp seasoned soy sauce for seafood, mix well)

Middle: Ginger paste, add salt and sesame oil  
Right: Chili sauce (1 tbsp garlic chili sauce & 1 tbsp sweet chili sauce, mix well)


Recipe:
1.  Cook chicken with chicken stock (enough to cover the chicken), add all ingredients and bring to boil on high heat. Cover and turn off heat, let it stand for 55mins. [Use chicken stock to cook rice and soup later]





2.  Remove chicken and chill in cold water for 10mins, drain well, marinade with seasoning, set aside for an hour


3.  Mix rice with 4 cups of chicken stock and ingredients from above, cook rice in a rice cooker as per instruction





4.  Chop chicken and garnish, serve with dip sauce






5.  To prepare soup, fill pot with remaining chicken stock, add cabbage, onion, carrot, bring to boil then simmer for approx. 15mins, add tofu simmer for 2mins, serve with chicken rice
 
 
材料:(8人份量)

1.2 - 1.5 公斤(澳洲的朋友,建議選用泛微黃色的粟米雞)
雞湯 (份量足以涵蓋雞身)

茶匙黃油
1
茶匙鹽

杯壽司米
 
調味料:(適量)
花雕酒
麻油
醬油

 
配料:
黃瓜片
番茄片
香菜葉
 
蘸醬(十點醬):
薑茸,加鹽和麻油調味(喜歡的話也可以,加少許豉油、香蔥、青檸汁)
辣椒醬 (1 湯匙蒜茸辣椒醬 & 1 湯匙甜辣醬,拌勻)
黑醬油 (1 湯匙雙老頭抽 & 1 湯匙海鮮醬油,混勻)
 
製作方法:
1. 
用雞湯煮雞 (份量足以涵蓋雞身),添加所有材料,高溫煮沸,熄火,靜候 55分鐘,[使用部份雞湯煮米飯和湯汁]
2. 
雞隻靜置在冷水 10分鐘,瀝乾,用調味料醃泡一個小時
3. 
混合壽司米和 4 杯雞湯,按電飯煲指令煲飯
4. 
雞隻涼後切件,加上配料裝飾,食用時以蘸醬調味
5. 
準備湯,將鍋內剩餘雞湯加熱,添加椰菜、 洋蔥、 胡蘿蔔、 燜煮約 15分鐘,再加入豆腐,2分鐘便可以享用!
