「餃子」在中國家庭甚至西方國家,扮演著一個非常重要的角色,在節慶裡大派用場,今天為大家帶來吉祥、好兆頭的「金元寶」特別選用有降血糖、幫助消脂排毒功效的南瓜做餃子皮,金燦燦的養生元寶,祝福大家來年 。。。

Dumpling pastry:
350g all-purpose flour
200g pumpkin
1/2cup of water
Pinch of salt
Stuffing:
200g Minced pork
200g shrimp, dice
6 shiitake mushrooms
Handful of spring onions
1 teaspoon (sugar, soy sauce, sesame oil, oyster sauce, cornstarch)
Pinch of salt and pepper
Pastry recipe:
Peel pumpkin and dice add water, microwave for 5 minutes on high, let it cool, mash and filter
Sift flour add salt and pumpkin juice, knead into dough, cover with a damp cloth, leave for 30 minutes
Knead with rolling pin on a baking paper to form dumpling pastry
Stuffing Recipe:
Mix all ingredients, keep in refrigerator for half an hour, prepare dumplings as per pictures (Please Note: Sycee is one of the many different Chinese dumplings wrapping techniques, others will slowly introduce in the near future)
Cook for 6 minutes on high until dumplings float on the surface of the boiling water, serve and enjoy!

Teaspoon = tsp
餃子皮:
350克 中筋麵粉
200克 南瓜
1/2杯 水
少許 鹽
餡料:
200克 豬肉碎
200克 蝦
6朵 香菇
少許 蔥末
1茶匙(糖、醬油、麻油、蠔油、生粉)
少許 鹽、胡椒粉
餃子皮製法:
南瓜去皮切粒,混同水一起放入微波爐,高溫叮5分鐘,壓成泥,待涼,過濾
麵粉過篩,加鹽,加入南瓜汁,搓揉成麵糰,蓋上濕布,醒30分鐘
放牛油紙上,揉擀成餃子皮
餡料製法:
混合所有材料,置雪櫃半小時,把餃子包成元寶形狀(註:中式餃子有許多不同包法,日後慢慢再為大家介紹)
大火,煮大約6分鐘,加兩次冷開水, 餃子浮游水面,便可享用
