Mango gelato with coconut flavor Udon 香芒雪糕伴椰汁烏冬【食譜】

Mango gelato with coconut flavor Udon 香芒雪糕伴椰汁烏冬

份量:  2
 
工具
擀麵杖
 
麵條:
200g 
中筋麵粉  (過篩)  
80ml 
椰汁  (先冷卻)
2
湯匙  煉乳 
少許   
 
自家製芒果雪糕
食譜,撰寫中,容後發放, 。。。
 
湯汁
1.5
  椰汁
1/2
  鮮牛奶
2
湯匙  煉乳 
 
少許 薄荷葉
 
製法
1. 
把椰汁、煉乳和鹽,混合一起,加入放有麵粉的盆中,用刮刀攪拌,形成麵糰,用手搓至均勻。
 

 
2. 
把麵糰放置保鮮袋內,靜候麵糰鬆弛45分鐘。
 

 
3. 
把鬆弛後的麵糰,用毛巾包裹好,放置地板之上,以腳跟踩麵糰(360度旋轉,為期1分鐘),麵糰受力後,會向四面平均伸展。

 
4. 
把麵糰,上下、左右折疊在一起,成為小正方形,放回保鮮袋內,並重複剛才(3)和(4)的踩麵、折疊方法,共45次。
 

 
5. 
完成後的麵糰,置室溫,靜候1小時。
 
6. 
把抹上麵粉的擀麵杖,把麵糰推開,最後橫摺一起(如圖),切成喜愛的寬度,我的,約6mm
 


 
7. 
大火把麵條煮開,約3-4分鐘便可(由於是即製麵條,需時不久),不時攪拌,以免麵條黏附一起,煮成後以冷水沖洗膠質,放置碗中,備用。
 
8.
把「湯汁」材料煮成甜湯,冷卻後,加入麵條內,最後放上自家製芒果雪糕、荔枝和薄荷葉,即可享用!
 
溫馨蜜語 】:
         
要令麵糰,富有彈性和嚼勁,水分不能過多。  耐心等待醱酵時間,亦不能免。
 
Ingredients :  2 people

Rolling pin
 
Noodles:
200g   all-purpose flour   (sift)
80ml   coconut juice  (cool off)
2 tbsp  condensed milk
Pinch salt

Milky broth:
1 1/5 cup coconut milk
1/2 cup fresh milk
2 tbsp condensed milk
 
A few mint leaves
 
Recipe:
1. Put coconut milk, condensed milk and salt in a mixing bowl and stir. Then, add flour and stir until dough is formed.
 
2. Place fresh dough into a storage bag and store for 45 minutes.
 
3. Wrap the plastic bag with a towel, placed on the floor, heels on the surface (360 degree rotation for a period of 1 minute), and the dough will stretch outward.
 
4. Fold dough together in small squares to be placed on storage bags and repeat (3) and (4) procedures 4-5 times.
 
5. After the completion of the dough, leave at room temperature, wait 1 hour.
 
6. With a floured rolling pin, push dough away, fold into shape (pictured), cut into the preferred width, mine approx. 6mm.
 
7. Cook noodles in boiling water about 3-4 minutes (noodles is freshly made takes no more than 4 mins) , stirring from time to time, in order to avoid noodles sticking together, rinse in cold water. Place in a bowl.
 
8. Prepare the "Milky broth" in medium heat until bubbles start to appear, stir well, cooling, add noodles and top with homemade mango gelato, lychee and mint, enjoy!
