Ingredients (Serves 2)
✿ Soup
2 cups fresh strawberries
½ cup white grape juice
1 cup plain yogurt
½ tablespoon honey
1 tablespoon Frangelico
¼ teaspoon sea salt
✿ Garnish
Large strawberries
¼ cup crème fraîche
½ cup caramelised fig ice-cream or yoghurt
Edible flowers
■ Soup
In a blender puree the strawberries with the grape juice, set aside ¼ cup of the puree to use as garnish. Add all other ingredients into the blender and puree. Chill well and adjust seasoning before serving.
■ Garnish
Place a ring mould into the centre of a chilled soup bowl, arrange the sliced strawberries in the centre of the bowl, fill the strawberry ring with crème fraîche, pour the chilled soup into the bowl and garnish.
