Chilled Strawberry Soup 草莓凍湯 【食譜】

   

Ingredients  (Serves 2)
 
  Soup
2 cups fresh strawberries
½ cup white grape juice
1 cup plain yogurt
½ tablespoon honey
1 tablespoon Frangelico
¼ teaspoon sea salt
 
  Garnish
Large strawberries
¼ cup crème fraîche

½ cup caramelised fig ice-cream or yoghurt
Edible flowers
 

  
  Soup
In a blender puree the strawberries with the grape juice, set aside ¼ cup of the puree to use as garnish. Add all other ingredients into the blen
der and puree. Chill well and adjust seasoning before serving.
 
  Garnish
Place a ring mould into the centre of a chilled soup bowl, arrange the sliced strawberries in the centre of the bowl, fill the strawberry ring with crème fraîche, pour the chilled
soup into the bowl and garnish.
 
Please note   Edible flowers  -  the most commonly used flowers are roses, marigolds, nasturtiums, lilacs, mums, daisies, violas    Also blossoming herbs and fruits such as .......  rosemary pink, thyme lemon, squash, chives, peaches, almonds, plums, lavender, zucchini, chamomile and lemons
