Roasted pork belly 脆皮燒腩仔 【食譜】
「民以食為天」 面對著金黃色,酥脆的豬皮,肥瘦兼備,味道香嫩醇厚的燒腩仔,相信沒有多少人,能夠抗拒它!
近來悉尼的洋人超市,更容易買到,已經整理好的豬腩肉,雖然價錢較一般唐人肉店貴,但勝在可以手到拿來,方便快捷嘛!
免得清潔骯髒、油淋淋的烤箱,倒不如改用花園內的燒烤爐吧!難度【零】

材料:
五花腩肉 約2公斤
蔥 ...... 1條
薑 ...... 2片
調味料:
幼鹽 ............. 2茶匙
砂糖 ............. 2茶匙
鹽焗雞粉 ...... 1湯匙
花雕酒 .......... 1湯匙
麻油 ............. 1茶匙
白醋 ............. 1茶匙
粗鹽 ............. 1湯匙
製法:
1. 五花腩肉連同蔥、薑放入滾水,煮10分鐘,取出放入冰水中浸8分鐘。
2. 在豬皮和肉上面鬆針,用毛巾拍乾水份,在肉上面塗抹調味料後,以酒和白醋塗抹豬皮表面,放置於電冰箱內一夜,取出再在豬皮上面鬆針,以毛巾輕輕拍乾豬皮上之醋汁,靜置室溫中約半天。
3. 再一次在豬皮上面鬆針,然後用毛巾拍乾油份,放入用錫箔紙做成的焗盤內,在豬皮上面灑滿粗鹽,預熱烤爐以 200ºC 焗 35分鐘。
4. 將溫度調高至 250ºC 烤15-20分鐘,重複【 在豬皮上面鬆針,然後用毛巾拍乾油份 】之工序 2至3次,直至豬皮表面呈現金黃色,帶有芝麻皮便成,稍微放涼,斬成丁方小塊上碟,便成了。
Ingredients :
Pork belly approx. 2kgs
1 shallot
2 slice of ginger
Seasoning:
2 tsp salt
2 tsp sugar
1 Tbsp spicy bake mix
1 Tbsp Shaoxing yellow wine
1 tsp sesame oil
1 tsp white vinegar
1 Tbsp coarse salt
Recipe:
1. Cook pork belly with shallot and ginger in boiling water for 10 minutes then soak in ice cold water for 8 minutes.
2. Pierce the pig skin and meat, pat dry pork skin with a clean dry towel, spread the seasoning over meat and rub the pork skin with wine and vinegar then place in the refrigerator overnight.
3.【 Pierce the pig skin and pat dry with a clean dry towel 】, set aside at room temperature for half a day.
4. Repeat Step 3 【 " " " 】, wrap the pork belly with aluminum foil, cover the pig skin with coarse salt, preheat oven to 200ºC bake for 35 minutes.
5. Increase temperature to 250ºC bake for 15 to 20 minutes, or until it is golden brown on the surface. Repeat Step 3 【 " " " 】 2 to 3 times during cooking, remove from heat and set aside to cool, chop and serve, enjoy!
